What is evaporation?

When a liquid substance turns into a gaseous substance, it is known as evaporation. This process is often observed on hot days when rain puddles disappear from wet surfaces. The liquid water in these samples evaporates into a gas called water vapor, rather than simply vanishing.

Therefore, by keeping lids on products, it helps prevent evaporation. Lids create a barrier that reduces the rate at which liquids turn into vapor.
